Most of our fine wines are only available in-store, owing to very limited availability on most of them, but some make such a big impression that we believe they deserve a special mention!
We’ve started the featured producers page with a look at some spectacular producers from Burgundy. Recently, we did a tasting of the very limited edition wines from Patrick Bouju – a cult producer from the Auvergne in France, better known for its saucisson! Patrick has developed a worldwide following and we are thrilled to have achieved an allocation of his rare, low-intervention and energetic wines, which have just landed in Ireland. Sadly, these are available in such tiny quantities, they are only available in-store, although the Burgundy wines listed below can be purchased online, while stocks last.
Patrick Bouju, Domaine de la Bohème, Auvergne
Patrick Bouju initially studied chemistry, and it was in school that he discovered was intolerant of sulphur, meaning many wines were unavailable to him. Friendships formed during military service, with the sons of some natural wine makers, inspired him to consider the wine making route for himself, which ended in oenological studies in Beaune. Upon completion of his studies, he moved to the Auvergne to make natural wines, initially with tiny plots and in 2008, he took the plunge and made it a full-time job.
Neighbouring Burgundy and Beaujolais, the Auvergne is generally quite a mountainous area, and benefits from cooler temperatures. Earlier-ripening grapes do best here, and the traditional grapes are Chardonnay and Pinot Noir. Patrick Bouju has almost single-handedly raised the profile of the region in recent years.
Patrick owns many abandoned plots, spread around the area, with the average elevation at about 1600m, some of them planted with 100+ years, pre-phylloxera vines. The majority of his vines are Pinot Noir and Gamay, although he also grows local, indigenous grape varieties. He farms organically, with minimal intervention in the winery and most of the vineyard work is done without machinery.
Patrick oversees every aspect of production, both in the vineyard and the winery. Each plot is vinified separately to showcase the terroir of individual sites and each of the fermentations spontaneously occurs with the native vineyard yeast. He creates wines of depth through small yields and long extractions and harvest takes place quite late, usually from mid-October, to ensure full ripeness. Later harvesting is made possible because of the high altitude of the vineyards. There is zero sulphur added in the vineyard or winery. nor are wines fined or filtered. A true natural wine maker.
